How To Prevent Mold From Growing On Jelly And Jam

Typically,  handmade jam and jelly don’t extend mold on their own, because of the high acid of the fruit and the preservative action of the sugar. But mold spores can sometimes enter a jelly jar through contamination from a utensil that was earlier used to a different food—the bread for example. A microscopic piece of bread with a mold spore can stick to the spoon over or table knife when you stretch the jelly on the bread. We keep cold open jars, and we are particularly watchful of cross-contamination, using a separate spoon for the jelly. But it is probable that when we widen the first spoonful of jelly on the bread, it picked up a microscopic mold spore that got introduced to the jar when we go for a next spoonful. 


                     


When You Can Keep Foods with Mold

There are thousands, if not millions, of dissimilar sorts of mold, from helpful ones like penicillium to toxic ones. Experts warn that scooping out the observable mold is not an answer since the mold shoots microscopic tendrils deep into the foodstuff. You can save hard cheeses, firm fruits and vegetables by cutting out at least an inch around and beneath the mold spot. But the organization advises you to toss baked goods, bread, casseroles, grain, jams and jellies, meat, nuts, pasta, peanut butter, soft cheeses, soft fruits and vegetables, sour cream, yogurt and other foods. 

  


Tips For Making Successful Homemade Jams And Jellies

Prefer ripe fruit that is free of bruises or mold
1. Using fresh fruit at room temperature helps dissolve the sugar
2. Wash berries thoroughly — do not allow them to soak which reduces nutritional value and contributes to a soft product


Do not reduce the amount of sugar
1. The proper proportion of sugar, fruit, and pectin is important to get a good jellied      
     product
2. Sugar contributes flavor but is also a preservative which helps prevent the growth of     microorganisms
3. Granulated white sugar is usually used — other sweetener flavors can overpower the     fruit's natural flavor and sweetness
